Garlic sprouts if it's stored out in the open, and often molds if left in a damp place like the fridge. These jars are pretty enough to keep on the counter. Their dark interior keeps the garlic from sprouting, and their air holes keep it from molding.
Rub some fresh garlic or ginger across the sharp spikes at the bottom of the dish. Pour some olive (or another) dipping oil over it and add spices . Dip fresh bread in the mixture. This one should probably be hand-washed (spikes are delicate).
Fill with veggies and set on a similar diameter pot filled with water. Turn up the heat and let the water boil. This casserole has a chimney up the middle, to allow the steam from the pot below to fill the casserole, cooking the contents perfectly. The stoneware stays warm at the table.
